Soul food, good wine — and creating a great time for others (and myself): that's probably a pretty accurate description of who I am.

In 2020 I originally only stepped in briefly to help out at uuuhmami — and stayed. A temporary job became a dual-study programme, then full-time, then operations manager, and today: Managing Director. Not quite "from dishwasher to millionaire" — but almost.

I see something special in simple things — and love making our processes more efficient, better and clearer. Ideally straight away, because patience isn't exactly my strong suit.

A while back I was asked to introduce myself on a podcast. I described my profession as "an entrepreneur who consciously chose hospitality."

For me, gastronomy is more than cuisine, recipes and menus. It means creating places where people love to meet. We are the proverbial bonfire. The place for a first date, an anniversary — and everything that moves people emotionally.

For all of that to be possible, you need a functioning business. That's why I see myself first and foremost as an entrepreneur — who has found his home in one of the most beautiful and most demanding industries there is.

I have always loved food, especially pasta and everything that requires dough.

Born and raised in Rome, I set foot in my first restaurant at age four — my father worked relentlessly in gastronomy, and whenever I wasn't in school, I was right there with him. In 2004 I had my first real experience making pizza, and by 2006 I had opened my first shop.

Over 16 years as a pizzaiolo, I mastered every style imaginable. For the past six years, I have called uuuhmami in Heidelberg my home — where I was able to refine my techniques and expand my knowledge beyond pizza. My greatest joy is using great ingredients to create dishes that bring happiness to people.

My journey in gastronomy began as an apprentice at Traube Tonbach, with its 3-Michelin-star Schwarzwaldstube. From there it went to Paul Bocuse in France, then Daniel Boulud in New York, then Mathias Maucher in Cologne.

After that, a different perspective called to me: the role of F&B Manager at the Lerch Group was perfectly suited for that.

In 2019 it was time to put down roots and build something of my own. Together with Ellis and Marco we decided Heidelberg was ready for a different kind of hospitality: relaxed yet ambitious. Approachable with a high standard of quality. Above all: genuine.
